Brewer's Breakfast Hot Chocolate

When brewing a beer, the first step of the process is to mash the grain. This is accomplished by adding crushed barley to a vat of hot water. Depending on the temperature of the water, different enzymes in the barley will get to work converting the starches into different types of sugars. The result is a malty and sweet liquid, almost like a barley tea, known in brewing circles as "wort". Brewers have long taken this hot wort and added a dram of scotch, making a drink called a hot scotchie, or brewer's breakfast. Brewing requires hard manual labour, and it's nice to take a little break while you watch the brew boil, with a cozy drink in hand. For our hot chocolate we start with a roasty chocolate rye wort and add a house-made cocoa syrup and heavy cream, to create the base drink. In place of whiskey we will be adding Amaro Averna to bump up the cocoa flavour as well as balance the sweetness with a subtle bitterness. We will also add Flor de Cana 4yr to bring out the raw sugar cane flavours of the demerara sugar.
