Campfire Maple Biscuit Royale - is inspired by Canmore’s camping culture in the heart of the Rocky Mountains. Around here, a campfire isn’t complete without hot chocolate, toasted marshmallows, and something crunchy to share — cookies, crackers, whatever’s on hand. We wanted to capture that moment of warmth and nostalgia, but move beyond the classic s’more. The drink begins with a dark chocolate base for fireside richness, layered with warm maple spice syrup to reflect one of Canada’s most iconic flavours. As one of the garnishes, instead of ordinary maple syrup, we chose pure maple cream — whipped maple syrup — drizzled over whipped cream for a smoother, lighter sweetness that feels special yet still rooted in tradition. Biscoff cookie butter steps in where graham crackers usually sit, offering a spiced biscuit note that’s widely loved and naturally suited to chocolate. To finish, torched marshmallow recreate the campfire ritual, while a touch of pink salt balances the sweetness. Mixed chocolate pearls are scattered on top to mimic stars in the dark mountain sky — a quiet nod to last year’s Hot Chocolate Festival creation, Mountain Starry Night, and a continuation of that same sense of wonder beneath the Rockies. This drink is meant to feel like a moment by the fire: warm, nostalgic, and uniquely Canmore.
