Passion Puff Cocoa
Growing up, winter meant one thing: Mum’s hot chocolate. It was the ultimate comfort, but I wanted to take that memory and dial it up. I started with the base—a decadent, French-style dark chocolate. It’s thick, lush, and serious. But to keep it from being too heavy, I brought in a piece of my backyard: passionfruit. We had this unruly vine that took over our back fence at home, and that bright, tropical acidity is exactly what you need to cut through the richness of the cocoa. To finish, I wanted texture and a bit of theater. I top it with torched marshmallows—because that smoky, caramelized flavor is unbeatable—and add a crispy chocolate wafer and freeze-dried raspberry bits for a sharp, crunchy zing. It’s a bit of fun, a lot of flavor, and a nod to where I came from.
