Nestled in the heart of Kingsland Junction in Southwest Calgary, you’ll find Egg & Spoon, a popular brunch spot created with a motivation to provide Calgarians with locally sourced ingredients and a fresh, forward-thinking approach to breakfast.
One frosty winter afternoon, the Egg & Spoon team, was handed a mysterious and rather poetic note from one of Egg & Spoons regulars. The note simply read, "I want a drink that merges the richness of chocolate with the earthiness of matcha, make it as unique as each snowflake in a gentle snowfall.”
Having never wavered from the mission to create food that is playful and imaginative, yet familiar and approachable, Egg & Spoon accepted this challenge. Starting with cocoa, deep and rich, and stirring in matcha for a calming, green twist. A dash of vanilla softened the bitterness, while the hazelnut brought in a nutty warmth. A pinch of salt balanced the complexity, like the calm after a storm. But this drink was still evolving. Adding steamed milk, frothy, silky, and comforting, provided a smooth base for the harmonious blend of flavors. A final flourish of the garnish brought the drink to life, the velvety matcha whipped cream offering a hint of earthiness, complemented by an unexpected yet delightful touch, an avocado espresso brownie.
